  • 1 cup cucumbers, sliced
  • 1 cup assorted bell peppers, sliced
  • 1/2 cup red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh dill, chopped
  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh oregano, chopped
  • 1 cup white vinegar
  • 2 tbsp extra virgin olive oil
  • 2 tsp sea salt
  • 1 tsp black pepper

Instructions

  1. Wash and slice cucumbers, bell peppers, red onion, and cherry tomatoes into bite-sized pieces.
  2. In a medium saucepan over medium heat, combine white vinegar, water (use equal parts to vinegar), sea salt, black pepper, and olive oil. Stir until it reaches a gentle simmer.
  3. Remove the saucepan from heat and mix in chopped dill, oregano, and crumbled feta cheese.
  4. Layer the sliced veggies in a large glass jar or bowl and pour the hot brine over them until fully submerged.
  5. Cover tightly and refrigerate for at least 24 hours before serving to allow flavors to meld.
