- 1 cup white vinegar
- 2 tbsp extra virgin olive oil
- 2 tsp sea salt
- 1 tsp black pepper
Instructions
- Wash and slice cucumbers, bell peppers, red onion, and cherry tomatoes into bite-sized pieces.
- In a medium saucepan over medium heat, combine white vinegar, water (use equal parts to vinegar), sea salt, black pepper, and olive oil. Stir until it reaches a gentle simmer.
- Remove the saucepan from heat and mix in chopped dill, oregano, and crumbled feta cheese.
- Layer the sliced veggies in a large glass jar or bowl and pour the hot brine over them until fully submerged.
- Cover tightly and refrigerate for at least 24 hours before serving to allow flavors to meld.
