- ¾ cup brown sugar
- 2 large eggs (room temperature)
- ½ cup milk or plant-based milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or non-stick spray.
- Roast sweet potatoes until tender (about 45 minutes). Allow cooling before peeling and mashing until smooth.
- In one bowl, mix mashed sweet potatoes, brown sugar, eggs, milk, and vanilla until well combined.
- In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Gradually fold this mixture into the wet ingredients until just combined (a few lumps are fine).
- Fill each muffin cup about three-quarters full with batter and bake for 20-25 minutes or until a toothpick comes out clean. Let cool for five minutes before transferring to wire racks.
