Ingredients

  • 1 cup sweet potatoes (mashed)
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¾ cup brown sugar
  • 2 large eggs (room temperature)
  • ½ cup milk or plant-based milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or non-stick spray.
  2. Roast sweet potatoes until tender (about 45 minutes). Allow cooling before peeling and mashing until smooth.
  3. In one bowl, mix mashed sweet potatoes, brown sugar, eggs, milk, and vanilla until well combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Gradually fold this mixture into the wet ingredients until just combined (a few lumps are fine).
  5. Fill each muffin cup about three-quarters full with batter and bake for 20-25 minutes or until a toothpick comes out clean. Let cool for five minutes before transferring to wire racks.
