  • 1 lb ground spicy Italian sausage
  • 8 oz cream cheese, softened
  • 2 cups shredded whole milk mozzarella cheese
  • 2 tbsp Cajun seasoning
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup chopped bell peppers (red or yellow)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, sauté the onion and garlic until translucent (about 4-5 minutes).
  3. Add the ground sausage and bell peppers; cook until browned (7-10 minutes).
  4. Stir in diced tomatoes and Cajun seasoning; let simmer for 5 minutes.
  5. In a bowl, combine softened cream cheese with half of the mozzarella until smooth.
  6. In a baking dish, layer meat mixture, noodles, and cheese mixture; repeat until all ingredients are used, finishing with mozzarella on top.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until golden brown. Let rest before serving.
