  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 tsp Cajun seasoning
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium sweet onion, diced
  • 4 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1/2 cup heavy cream (optional)
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until translucent (about 5 minutes).
  2. Add chicken breasts seasoned with Cajun seasoning; cook until browned on all sides (7-10 minutes).
  3. Stir in the bell peppers and sauté for another 5 minutes.
  4. Pour in the chicken broth and bring to a simmer; cook for about 20 minutes.
  5. Remove the chicken, shred it with two forks, and return to the pot. Stir well.
  6. If desired, add cream for richness and garnish with parsley before serving hot.
