  • 2 medium tomatoes, chopped (or 1 can diced tomatoes)
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • Salt and pepper to taste
  • 3 tbsp vegetable oil (or ghee)
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add chopped onions and sauté until golden brown, about 5-7 minutes.
  2. Stir in minced garlic and grated ginger; cook for an additional minute until fragrant.
  3. Add cumin seeds, coriander powder, turmeric powder, salt, and pepper; stir for about 30 seconds.
  4. Incorporate diced potatoes and tomatoes into the pot. Pour in enough water to cover the ingredients halfway.
  5. Bring to a gentle boil, then reduce heat to simmer for 20-25 minutes until potatoes are tender.
  6. Adjust seasoning if needed; garnish with fresh cilantro before serving.
