Ingredients

Scale
  • 1 lb rock cod fillets
  • 2 tbsp grated fresh ginger
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 2 green onions, chopped (for garnish)
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. In a medium bowl, whisk together the soy sauce, ginger, garlic, brown sugar, and lemon juice until well combined.
  2. Place rock cod fillets in a shallow dish and pour the marinade over them. Ensure even coating. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat or oven to 375°F (190°C).
  4. Remove marinated fish from the fridge and let sit at room temperature for about 10 minutes.
  5. If grilling: Cook fish skin-side down on oiled grill grates for 4-5 minutes per side until golden brown. If baking: Place fillets on a parchment-lined baking sheet and bake for 15-20 minutes until flaky.
