  • 2 tablespoons extra virgin olive oil
  • 2 sweet onions, chopped
  • 4 garlic cloves, crushed
  • 3 carrots, cut into chunks
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping onions, garlic, carrots, and celery.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned (about 4-5 minutes per side). Remove the roast from the skillet.
  3. In the same skillet, sauté onions, garlic, carrots, and celery until softened (about 7-8 minutes).
  4. Stir in canned diced tomatoes and beef broth; scrape any browned bits from the pan.
  5. Transfer everything into a slow cooker or Dutch oven. Place the browned roast on top and add bay leaves and fresh herbs.
  6. Cover and cook on low heat for 6-8 hours until the meat shreds easily with a fork.
