- 4 medium Yukon Gold potatoes, thinly sliced
- 1 medium onion, diced
- 2 cups grated cheddar cheese
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil
- Non-stick cooking spray
Instructions
- Preheat your oven to 375°F (190°C) and spray a 9×13 inch baking dish with non-stick cooking spray.
- In a large skillet over medium heat, add olive oil and brown the ground beef until fully cooked. Add the diced onion and sauté until translucent (about 5 minutes).
- Stir in garlic powder, salt, and pepper to combine flavors.
- Layer half of the sliced potatoes in the greased baking dish, followed by half of the beef mixture and half of the grated cheese. Repeat with remaining layers.
- Cover tightly with aluminum foil and bake for 45 minutes. Remove foil and bake uncovered for an additional 15 minutes until golden brown and bubbly.
