  • 2 lbs beef chuck roast
  • 3 medium carrots, chopped
  • 2 cups Yukon Gold or red potatoes, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop all vegetables into bite-sized pieces.
  2. Heat olive oil in a large pot over medium-high heat. Sear the beef chuck roast for about 3-4 minutes per side until browned.
  3. Add diced onions and minced garlic; sauté until onions are translucent (about 5 minutes).
  4. Stir in chopped carrots and potatoes.
  5. Pour in beef broth, add tomato paste, thyme, rosemary, salt, and pepper. Mix well.
  6. Bring the stew to a boil, then reduce heat to low and cover. Simmer for 2 hours until the beef is fork-tender.
