  • 1 lb 80/20 ground beef
  • 6 slices bacon
  • 1/2 cup mayonnaise
  • 4 slices American cheese
  • 4 brioche burger buns
  • Fresh lettuce, tomato, pickles (to taste)

Instructions

  1. Cook bacon in a skillet over medium heat until crispy (7-10 minutes). Reserve some bacon grease.
  2. In a bowl, combine mayonnaise, crumbled bacon, and reserved grease; season with salt and pepper to create baconnaise.
  3. Heat a cast-iron skillet over high heat. Form ground beef into four 3-ounce balls and place them in the skillet. Smash each ball into a patty immediately.
  4. Cook patties for 3-4 minutes until browned, then flip and top with cheese. Toast buns cut-side down in reserved bacon grease.
  5. Assemble burgers with baconnaise on both bun halves, adding toppings as desired.
