  • 2 medium carrots, diced
  • 2 stalks celery, diced

  • 6 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas under cold water until clear. Chop all vegetables into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Sauté onions for about 5 minutes until translucent.
  3. Add carrots, celery, and garlic; cook for an additional 3 minutes.
  4. Stir in split peas, vegetable broth, bay leaves, and thyme. Bring to a boil.
  5. Reduce heat to low, cover partially, and simmer for about 45 minutes or until peas are tender.
  6. Remove bay leaves and stir in lemon juice. Adjust seasoning as desired before serving.
