  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 tbsp extra virgin olive oil
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 2 cups kale or spinach, chopped
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping carrots and celery, and mincing garlic.
  2. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté until translucent (about 5 minutes).
  3. Stir in minced garlic and dried herbs; cook for another minute until fragrant.
  4. Add vegetable broth and rinsed cannellini beans; bring to a gentle boil, stirring occasionally.
  5. Reduce heat to low, stir in greens, and simmer for about 15 minutes until tender.
  6. Season with salt and pepper to taste before serving.
