  • 8 oz Tuscan Radiatore Pasta
  • 3 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1 cup cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/4 cup pine nuts, toasted
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the Tuscan Radiatore Pasta in salted boiling water for 8-10 minutes until al dente. Drain, reserving some pasta water.
  2. In a large skillet over medium heat, add olive oil and sauté garlic until fragrant (about 30 seconds). Add cherry tomatoes and cook until they soften.
  3. Stir in the spinach and season with salt and pepper until wilted.
  4. Mix in toasted pine nuts and Parmesan cheese until well combined.
