  • 4 medium flour tortillas
  • 6 large eggs
  • 1 cup whole milk
  • 1 cup diced bell peppers
  • 1/2 cup diced sweet onion
  • 1 cup shredded sharp cheddar cheese
  • 1 cup fresh spinach, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin or taco seasoning (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 2 tbsp olive oil over medium heat. Sauté diced bell peppers and onions until tender (about 5 minutes).
  3. In a bowl, whisk together eggs and milk until creamy. Fold in spinach and cheese.
  4. Grease a pie pan and layer two tortillas, pour half the egg mixture over them. Add two more tortillas and top with remaining egg mixture.
  5. Bake for 30-35 minutes until golden brown and set.
  6. Let cool slightly before slicing; serve warm with salsa or avocado.
