- 4 medium flour tortillas
- 6 large eggs
- 1 cup whole milk
- 1 cup diced bell peppers
- 1/2 cup diced sweet onion
- 1 cup shredded sharp cheddar cheese
- 1 cup fresh spinach, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin or taco seasoning (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat 2 tbsp olive oil over medium heat. Sauté diced bell peppers and onions until tender (about 5 minutes).
- In a bowl, whisk together eggs and milk until creamy. Fold in spinach and cheese.
- Grease a pie pan and layer two tortillas, pour half the egg mixture over them. Add two more tortillas and top with remaining egg mixture.
- Bake for 30-35 minutes until golden brown and set.
