  • 2 tbsp (30ml) extra virgin olive oil
  • 1 tbsp fresh rosemary or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes. Slice them into even rounds about 1/4 inch thick.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, pepper, and chopped herbs until evenly coated.
