  • 3 cups sweet potatoes, peeled and diced
  • 4 tablespoons unsalted butter
  • 1/2 cup brown sugar (dark)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, chopped
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Boil the sweet potatoes in water until tender, about 15-20 minutes. Drain and return to the pot.
  2. Add butter, brown sugar, eggs, vanilla extract, cinnamon, and nutmeg to the sweet potatoes. Mash until smooth.
  3. In a separate bowl, mix chopped pecans with melted butter and brown sugar.
  4. Spread the sweet potato mixture into a greased baking dish and top with the pecan mixture.
