  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1/2 cup sweet chili sauce
  • 1 cup assorted bell peppers, thinly sliced
  • 1 medium cucumber, thinly sliced
  • 4 soft flour tortillas (8-inch)
  • 1 cup lettuce leaves
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, chopped
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients by dicing the chicken into bite-sized pieces and slicing the bell peppers and cucumber.
  2. Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and cook until golden brown and cooked through (6-8 minutes).
  3. Stir in minced garlic and sweet chili sauce, cooking for an additional 2-3 minutes until well combined.
  4. Lay a tortilla on a flat surface; place lettuce leaves first, then top with the chicken mixture and veggies. Sprinkle green onions on top.
  5. Fold in the sides of the tortilla and roll tightly from the bottom to secure all ingredients inside.
