  • 4 skinless salmon fillets (6 oz each)
  • 2 cups fresh spinach (about 60g)
  • 1 cup crumbled feta cheese (150g)
  • 3 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and minced garlic until fragrant. Add fresh spinach and sauté until wilted.
  3. Remove from heat; mix in crumbled feta cheese, lemon juice, salt, pepper, and oregano.
  4. Pat dry each salmon fillet and create a pocket in each fillet using a sharp knife.
  5. Generously fill each salmon pocket with the spinach-feta mixture.
  6. Place stuffed salmon on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the salmon flakes easily with a fork.
