- 1 cup cranberries (fresh or frozen, unsweetened)
- 2 medium apples (Granny Smith, diced)
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 4 tbsp unsalted butter (softened)
- 2 tsp fresh thyme (chopped)
- 2 tsp fresh rosemary (chopped)
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Preheat oven to 375°F (190°C).
- Rinse the chicken under cold water and pat dry.
- In a skillet, melt butter over medium heat; sauté onions and garlic until soft.
- In a bowl, combine sautéed onions, cranberries, apples, thyme, rosemary, salt, pepper, and lemon juice.
