- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 medium onion, finely chopped

- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded mozzarella cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic until fragrant.
- Add ground meat and cook until browned. Stir in rice, diced tomatoes, salt, pepper, cumin, and paprika; simmer for 5 minutes.
- Fill each pepper with the meat mixture tightly. Place in a baking dish, cover with foil, and bake for 25 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered for another 10-15 minutes until cheese is melted.
