  • 9 oven-ready lasagna noodles
  • 15 oz whole-milk ricotta cheese
  • 4 cups fresh baby spinach
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup freshly grated parmesan cheese
  • 1 large egg
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté spinach in olive oil until wilted, about 3 minutes. Season with salt and pepper.
  3. In a bowl, mix ricotta cheese, egg, half of the parmesan cheese, and Italian seasoning until smooth.
  4. In a 9×13 inch baking dish, spread a thin layer of marinara sauce. Layer with noodles, ricotta mixture, sautéed spinach, marinara sauce again, and mozzarella cheese. Repeat layers until all ingredients are used.
  5. Cover with foil and bake for 25 minutes. Uncover and bake for an additional 15 minutes until golden and bubbly.
  6. Let cool for 10 minutes before slicing and serving with remaining parmesan.
