  • 4 boneless, skinless chicken breasts
  • 1/2 cup pure maple syrup
  • 2 tsp fresh ginger, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup jasmine rice
  • 1/4 cup low-sodium soy sauce
  • 1 tsp red pepper flakes (adjust to taste)
  • 4 garlic cloves, minced
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade by mixing maple syrup, soy sauce, garlic, ginger, red pepper flakes, salt, and pepper in a bowl. Add the chicken breasts and marinate for at least 30 minutes.
  2. Rinse jasmine rice under cold water until it runs clear. In a saucepan, combine rice, coconut milk, and an equal amount of water. Bring to a boil, then reduce heat to low and cover until fluffy (about 15-20 minutes).
  3. Heat oil in a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and cook for about 5-6 minutes per side until golden brown and cooked through.
  4. Pour reserved marinade into the skillet after removing chicken; cook until thickened slightly (about 3 minutes). Drizzle over the cooked chicken.
  5. Fluff coconut rice with a fork; serve chicken on top of rice with extra sauce.
