- 1/2 cup pure maple syrup
- 2 tsp fresh ginger, minced
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup jasmine rice
- 1/4 cup low-sodium soy sauce
- 1 tsp red pepper flakes (adjust to taste)
- 4 garlic cloves, minced
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Prepare the marinade by mixing maple syrup, soy sauce, garlic, ginger, red pepper flakes, salt, and pepper in a bowl. Add the chicken breasts and marinate for at least 30 minutes.
- Rinse jasmine rice under cold water until it runs clear. In a saucepan, combine rice, coconut milk, and an equal amount of water. Bring to a boil, then reduce heat to low and cover until fluffy (about 15-20 minutes).
- Heat oil in a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and cook for about 5-6 minutes per side until golden brown and cooked through.
- Pour reserved marinade into the skillet after removing chicken; cook until thickened slightly (about 3 minutes). Drizzle over the cooked chicken.
- Fluff coconut rice with a fork; serve chicken on top of rice with extra sauce.
