  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup bell peppers, diced (mix of red and green)
  • 1 medium onion, chopped
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 2 tsp southwest seasoning
  • ¼ cup sour cream
  • Fresh cilantro (optional), chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté chopped onion in olive oil until translucent. Add diced bell peppers until tender.
  3. Stir in cubed chicken and black beans; cook until chicken is no longer pink (7-10 minutes).
  4. Mix in southwest seasoning and half of the crushed tortilla chips.
  5. In a greased baking dish, layer half of the mixture, add cheddar cheese, then top with the remaining mixture.
  6. Bake uncovered for 25-30 minutes until bubbly and golden brown.
