  • 1 cup cornmeal (medium or fine grind)
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/4 cup sugar
  • 1 cup whole milk (or buttermilk)
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup honey
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a mini muffin tin with liners or nonstick spray.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt.
  3. In another bowl, mix melted butter with eggs and milk. Stir in honey until well combined.
  4. Gradually add wet ingredients to dry ingredients, stirring gently until just combined.
  5. Fill each muffin tin cup about two-thirds full with batter.
  6. Bake for 15–20 minutes or until golden brown and springy to touch.
  7. Allow to cool slightly before serving warm with extra honey butter.
