  • 3 medium Yukon Gold potatoes, peeled and diced (about 2 cups)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 tbsp tikka masala paste
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prep the ingredients by peeling and dicing the potatoes; mince garlic and ginger.
  2. In a slow cooker, combine potatoes, chickpeas, onion, garlic, ginger, and tikka masala paste. Stir until well coated.
  3. Pour in coconut milk; add salt and pepper to taste. Stir gently to combine.
  4. Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  5. About 20 minutes before serving, stir in spinach or kale until wilted.
  6. Serve in bowls garnished with chopped cilantro.
