  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 1 cup low-sodium chicken broth
  • 2 tsp mixed herbs (thyme & rosemary)
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp low-sodium soy sauce
  • 1 cup chopped carrots and bell peppers (optional)

Instructions

  1. Prepare your ingredients by washing and chopping the veggies.
  2. Place the chicken breasts in the bottom of the slow cooker.
  3. Layer the chopped onion, minced garlic, salt, pepper, thyme, rosemary, soy sauce, and chicken broth over the chicken.
  4. Gently stir to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
  6. Shred the chicken with two forks directly in the pot and mix it with the sauce before serving.
