  • 1/3 cup honey (high-quality)
  • 2 cups all-purpose flour
  • 1 cup roasted unsalted pistachios (coarsely chopped)
  • 1 tsp baking soda
  • 1/4 tsp sea salt (plus extra for topping)
  • 1 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, brown sugar, and honey until light and fluffy (about 3 minutes).
  3. Add the egg and vanilla extract; beat until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
