  • 1 whole head of fresh garlic
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream (or milk for a lighter version)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Peel and chop Yukon Gold potatoes into uniform pieces. Boil in salted water for 15-20 minutes until fork-tender.
  3. Drain potatoes and return them to the pot over low heat to evaporate moisture. Squeeze in roasted garlic, add butter and heavy cream.
  4. Mash using a potato masher or hand mixer until smooth but fluffy. Season with salt and pepper, then garnish with chives or parsley before serving.
