  • 1 bunch fresh dill, chopped
  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 4 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 1 medium carrot, chopped (about 1/2 cup)
  • 1/2 cup heavy cream (or coconut milk)
  • Salt and pepper to taste
  • 1 tbsp lemon juice

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables.
  2. In a large pot, heat oil over medium heat. Sauté the onions and carrots until soft (about 5 minutes).
  3. Add the chicken broth and diced potatoes; bring to a gentle boil. Cook for about 10 minutes until potatoes are tender.
