  • 14 oz firm tofu, pressed
  • 1 cup pineapple chunks (fresh or canned)
  • 1/3 cup teriyaki sauce (homemade or store-bought)
  • 2 green onions, thinly sliced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp vegetable oil
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder

Instructions

  1. Press tofu between paper towels to remove excess moisture, then cut into bite-sized cubes.
  2. In a bowl, combine tofu with teriyaki sauce and let marinate for at least 30 minutes.
  3. Heat vegetable oil in a skillet over medium heat. Add marinated tofu and cook until golden brown on all sides.
  4. Stir in pineapple chunks and sauté until slightly caramelized.
  5. Pour remaining teriyaki sauce into the pan, mixing until tofu is well-coated.
  6. Remove from heat and top with green onions and sesame seeds before serving over rice or quinoa.
