  • 1 cup jasmine rice
  • 1 cup bell peppers, diced (any color)
  • 2 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons honey
  • Juice of 1 lime
  • 1 teaspoon ginger powder
  • 2 green onions, chopped (for garnish)

Instructions

  1. Chop the chicken into bite-sized pieces and marinate with soy sauce, honey, lime juice, and ginger powder for 30 minutes.
  2. While marinating, cook the rice according to package instructions.
  3. In a large skillet over medium heat, add oil and cook the chicken until golden brown and cooked through (about 6-8 minutes).
