- 2 sheets puff pastry (thawed)
- 1 tsp dried thyme
- 4 tbsp unsalted butter
- ½ cup milk or cream

Instructions
- Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper; bake for 25-30 minutes until cooked through.
- In a skillet over medium heat, melt butter. Sauté onions, carrots, celery, and thyme for about 5-7 minutes until tender.
- Stir in ¼ cup flour; cook for another minute. Gradually add chicken broth and milk/cream while stirring until thickened.
- Shred the baked chicken and mix into the sauce along with frozen peas. Allow to simmer on low heat for about 5 minutes.
- Pour filling into an oven-safe dish lined with one sheet of puff pastry. Cover with the second sheet, crimp edges, and cut slits for steam release.
