- 1/2 cup granola or toasted coconut flakes (for topping)
Instructions
- In a mixing bowl, combine chia seeds, coconut milk, honey (or maple syrup), lime juice, and lime zest. Stir until well mixed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to thicken.
- Line an 8×8-inch baking dish with parchment paper for easy removal.
- Pour the thickened chia mixture into the prepared dish and smooth out with a spatula.
- While still wet, sprinkle granola or toasted coconut flakes on top for added crunch.
- Chill in the refrigerator for an additional 2-3 hours until firm.
- Once set, lift out of the dish using the parchment paper and cut into bars.
