  • 1 cup frozen tater tots
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers (mixed colors)
  • 1 cup fresh spinach, chopped
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a muffin tin with cooking spray.
  2. Press tater tots into each muffin cup to form a crust and bake for 15 minutes until crispy.
  3. In a bowl, whisk together eggs, salt, pepper, bell peppers, shredded cheese, and chopped spinach.
  4. Pour the egg mixture over the baked tater tots in each muffin cup, filling them three-quarters full.
  5. Return to the oven and bake for an additional 15-20 minutes until the egg is set and slightly puffed.
  6. Allow to cool for a few minutes before gently removing from the tin.
