  • 2 lbs Yukon Gold or red potatoes, chopped
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. Wash and chop the potatoes into uniform bite-sized pieces.
  3. In a large bowl, combine olive oil, cumin, paprika, garlic powder, salt, and pepper. Toss in the potato pieces until evenly coated.
  4. Spread the seasoned potatoes on the baking sheet in a single layer.
  5. Bake for 30-35 minutes, flipping halfway through until golden brown and crispy.
