  • 6 large eggs
  • 1 cup fresh button or cremini mushrooms, chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup low-fat cheese (feta or cheddar)
  • 1/2 cup skim milk
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 package puff pastry sheets (thawed)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped mushrooms until golden brown; add spinach and cook until wilted.
  3. In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
  4. Roll out puff pastry on a floured surface and cut into circles to fit muffin tin cups. Place circles in each cup.
  5. Evenly distribute the sautéed vegetables onto the pastry crusts and pour the egg mixture over them until almost full. Top with shredded cheese.
  6. Bake for 20-25 minutes or until puffed up and golden brown. Allow cooling slightly before serving.
