  • 1 cup lobster meat, cooked and chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp minced garlic
  • 2 tbsp fresh herbs (basil or chives), finely chopped
  • 24 wonton wrappers
  • 2 tbsp unsalted butter
  • 1 tbsp lemon juice
  • Salt to taste

Instructions

  1. In a bowl, mix lobster meat, ricotta cheese, Parmesan cheese, garlic, and herbs until well combined.
  2. Lay out wonton wrappers on a clean surface and lightly brush edges with water.
  3. Place about one tablespoon of the filling in each wrapper's center. Fold and seal tightly.
  4. Boil salted water in a large pot and cook ravioli for 3-5 minutes until they float.
  5. In a pan, melt butter over medium heat; add lemon juice. Toss cooked ravioli in the sauce before serving.
