  • 1/2 cup unsalted butter
  • 1 cup water
  • 4 large eggs (room temperature)
  • 8 oz mascarpone cheese (fresh)
  • 1/4 cup limoncello
  • 1/2 cup powdered sugar (sifted)
  • 1 cup heavy cream (cold)
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan, combine water, butter, and salt over medium heat until boiling.
  2. Add flour all at once, stirring until it forms a smooth ball that pulls away from the sides of the pan.
  3. Let the mixture cool slightly, then add eggs one at a time, mixing well after each addition until shiny and smooth.
  4. Pipe small mounds onto lined baking sheets, leaving space between them. Bake for 20-25 minutes until golden brown; leave in the oven for an additional 5 minutes with the door ajar to dry out.
  5. Whisk mascarpone until smooth; gradually mix in powdered sugar and limoncello. In another bowl, whip heavy cream to soft peaks and fold into the mascarpone mixture.
  6. Once cooled, cut slits in each profiterole and fill with mascarpone cream using a piping bag.
  7. Dust with powdered sugar before serving.
