- 3 medium zucchinis, sliced (about 4 cups)
- 1 ½ cups fresh ricotta cheese
- 2 cups shredded whole milk mozzarella cheese
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil, chopped
- 2 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Slice zucchini into thin rounds and lay on paper towels to absorb moisture.
- In a bowl, combine ricotta cheese, minced garlic, chopped basil, salt, and pepper until well mixed.
- In a baking dish, layer zucchini slices on the bottom. Spread half of the ricotta mixture over them followed by half of the mozzarella cheese.
- Repeat layering with remaining zucchini slices, ricotta mixture, and top with the rest of the mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
- Let cool for 5 minutes before slicing; garnish with extra basil if desired.
