  • 1 lb lean ground beef (80/20)
  • 1/4 cup almond flour
  • 2 large eggs
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • 1 cup low-sodium beef broth
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix ground beef, almond flour, eggs, chopped onion, garlic powder, salt, and pepper until just combined.
  3. Shape the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes until cooked through and golden brown.
  5. In a skillet, melt butter over medium heat. Add beef broth and Dijon mustard; scrape up any bits from the baking sheet.
  6. Stir in heavy cream and simmer until slightly thickened (about 5 minutes). Add freshly chopped parsley.
  7. Toss baked meatballs in the creamy sauce before serving.
