- 1 large egg
- 1/2 onion (finely chopped)
- 3 cloves garlic (minced)
- 8 oz mushrooms (sliced)
- 1 cup low-sodium beef broth
- 1/2 cup full-fat sour cream
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Fresh thyme or parsley (optional for garnish)
Instructions
- In a large bowl, mix ground beef, almond flour, egg, onion, garlic, salt, and pepper. Form into 1-inch meatballs.
- Heat olive oil in a skillet over medium heat; brown meatballs on all sides (about 5 minutes). Remove and set aside.
- Sauté sliced mushrooms in the same skillet until golden brown (about 3-4 minutes).
- Add beef broth and Dijon mustard to the skillet; stir well and scrape the bottom.
- Reduce heat to low, stir in sour cream until smooth, then return meatballs to the skillet. Simmer for about 10 minutes.
