  • 3 tbsp pure raw honey
  • 2 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp vegetable oil
  • 1 cup cooked rice or quinoa
  • 1 cup mixed vegetables (e.g., broccoli, bell peppers, snap peas)

Instructions

  1. In a bowl, whisk together Sriracha, honey, minced garlic, and soy sauce. Coat salmon in marinade and let sit for at least 15 minutes.
  2. Cook rice or quinoa according to package instructions.
  3. Heat vegetable oil in a skillet over medium-high heat. Sear salmon skin-side down for 4-5 minutes until golden brown.
  4. Flip salmon; add remaining marinade to the pan and cook for an additional 3-4 minutes until cooked through.
  5. Add mixed vegetables to the pan and stir-fry until tender-crisp (about 3-5 minutes).
