Ingredients

  • 1 cup sushi rice
  • 3 sheets nori
  • 4 oz imitation crab meat
  • 1 ripe avocado
  • 1 medium English cucumber
  • 2 tbsp seasoned rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • Low-sodium soy sauce (for dipping)
  • Wasabi (optional)

Instructions

  1. Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions.
  2. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Fold into cooked rice.
  3. Slice avocado into strips and julienne cucumber while the rice cools.
  4. Lay a nori sheet on a bamboo mat, spread rice evenly leaving an inch at the top edge uncovered.
  5. Place crab meat, avocado, and cucumber in the center of the rice-covered nori.
  6. Roll the nori tightly using the bamboo mat while gently pressing to keep it compact.
  7. Slice each roll into bite-sized pieces with a wet knife.
