  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt

Instructions

  1. 1. Create the Cookie Dough: In a large bowl, cream together the butter and brown sugar until fluffy. This takes about 3 minutes on medium speed.
  2. 2. Mix Dry Ingredients: Gradually add flour, ginger, cinnamon, baking powder, baking soda, and salt until combined; the dough should be thick.
  3. 3. Prepare Cream Cheese Filling: In a separate bowl, beat cream cheese with granulated sugar until smooth. Mix in the egg and vanilla extract.
  4. 4. Scoop & Fill: Preheat your oven to 350°F (175°C). Scoop cookie dough onto parchment-lined baking sheets. Make an indentation in each ball and fill with cream cheese mixture.
