Ingredients

  • 2 slices crusty bread (sourdough or ciabatta)
  • 1 ball burrata cheese (about 4 oz)
  • 2 oz thinly sliced prosciutto
  • 2 large eggs
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat a skillet over medium heat.
  2. Add prosciutto slices to the skillet and cook until crispy, about 3-4 minutes. Set aside.
  3. In another pan, heat olive oil over medium heat. Crack in eggs and fry until whites are set but yolks remain runny, approximately 4 minutes.
  4. Toast bread slices until golden brown.
  5. Assemble by layering burrata on each toast slice, topping with crispy prosciutto and the fried egg yolk.
  6. Drizzle with olive oil and season with salt and pepper to taste.
