- 4 cups beef broth

- 1 baguette, sliced for toasting
- 1 cup Gruyère cheese, grated
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C). Season short ribs with salt and pepper.
- In a large pot over medium-high heat, sear the short ribs until browned on all sides (about 3-4 minutes per side). Remove and set aside.
- In the same pot, add sliced onions and cook over medium heat until golden brown (about 20 minutes).
- Deglaze the pot with red wine, scraping up any bits stuck to the bottom. Simmer for about 5 minutes.
- Add beef broth and thyme; bring to a boil. Return short ribs to the pot, cover, and transfer to the oven.
- Let it simmer in the oven for about 2-3 hours until meat is fork-tender.
- Toast baguette slices while waiting. Serve soup topped with toasted bread and melted Gruyère cheese.
