Description

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 8 oz fresh feta cheese, crumbled
  • 2 cups cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). On a baking sheet, toss cherry tomatoes with 2 tbsp olive oil, salt, and pepper. Roast for about 20 minutes until they burst.
  2. Meanwhile, cook pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. In a pan over medium heat, add the remaining olive oil and sauté minced garlic for 1 minute until fragrant.
  4. Add drained pasta to the pan with garlic, then gently mix in roasted tomatoes and crumbled feta.
  5. If necessary, add reserved pasta water gradually until desired creaminess is achieved.
  6. Garnish with fresh basil and serve hot.
