Instructions
- Rinse sushi rice under cold water until clear. Cook according to package instructions.
- While rice cools, prepare fillings: slice avocado, mango, and julienne cucumber.
- Prepare tempura shrimp as per package instructions if using frozen.
- On a bamboo mat covered with plastic wrap, lay one nori sheet shiny side down. Wet hands and spread ¾ cup of sushi rice evenly over the nori.
- Add shrimp, avocado, mango, and cucumber horizontally across the center.
- Roll tightly using the bamboo mat; seal the edge with water.
- Slice the roll into six pieces with a wet knife and serve with soy sauce, wasabi, and pickled ginger.
