Ingredients

  • 1 cup sushi rice
  • 4 nori sheets
  • 8 tempura shrimp (pre-made or homemade)
  • 1 ripe avocado, sliced into strips
  • 1 ripe mango, sliced
  • ½ cucumber, julienned
  • Soy sauce (for serving)
  • Wasabi and pickled ginger (for serving)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions.
  2. While rice cools, prepare fillings: slice avocado, mango, and julienne cucumber.
  3. Prepare tempura shrimp as per package instructions if using frozen.
  4. On a bamboo mat covered with plastic wrap, lay one nori sheet shiny side down. Wet hands and spread ¾ cup of sushi rice evenly over the nori.
  5. Add shrimp, avocado, mango, and cucumber horizontally across the center.
  6. Roll tightly using the bamboo mat; seal the edge with water.
  7. Slice the roll into six pieces with a wet knife and serve with soy sauce, wasabi, and pickled ginger.
