Instructions

  1. In a large bowl, whisk together flour and sugar. Create a well in the center and add eggs, vanilla extract, and a pinch of salt. Mix until just combined.
  2. Transfer dough to a floured surface and knead gently for about 5 minutes until smooth and elastic.
  3. Divide the dough into small pieces and roll each into thin ropes about 1/4 inch wide. Cut into small pieces.
  4. Heat oil in a deep pan over medium heat until shimmering. Fry dough pieces in batches for about 3-4 minutes until golden brown.
  5. Use a slotted spoon to remove struffoli onto paper towels. Drizzle warm honey over them while they’re still hot.
  6. Toss gently with colored sprinkles and arrange on a serving platter.
