  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup heavy cream

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. In a crockpot, combine cooked beef with onion, garlic, diced tomatoes, black beans, corn, chili powder, and cumin. Stir well.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Just before serving, stir in heavy cream and shredded cheddar until melted.
  5. Serve hot with optional garnishes such as extra cheese or fresh cilantro.
